The five Chilean piscos from the Huasco valleys

About Chilean pisco

Pisco is a grape spirit — wine made from aromatic muscat grapes, distilled in a copper still, often clear and unaged. Chilean pisco comes from the desert valleys of the north, Atacama and Coquimbo, with rivers fed by Andes snowmelt, intense sun and big day-to-night temperature swings.

The name has been protected by law since 1931— one of the earliest denominations of origin for any spirit in the Americas. The evening's bottles sit around 40% and come from the villages of the Huasco valley: Vallenar, Alto del Carmen and San Félix.

The label states class (by alcohol strength) and type (by ageing: Transparente, Guarda, Envejecido). The grapes are the muscat family — de Alejandría, Rosada, de Austria, Torontel, Pedro Jiménez.

The cocktails

Leticia Brissman's cocktails are mixed with Pisco Bauzá — with pisco kindly provided by Wena Wines. Both styles are available at Systembolaget if you'd like one at home.
